We had a very excited child ask this week “My Mum would like to know if she can come to Kitchen Garden one day and help, would that be ok?” The answer is, “Absolutely!” We appreciate extra hands in Kitchen Garden and the children love to see parents and carers participating. This fortnight we made delicious and healthy pumpkin and chia seed muffins. These are great for the lunch box or for afternoon tea. Here is the recipe:
PUMPKIN AND CHIA SEED MUFFINS
Preheat oven to 190C.
- 1/3 cup butter or margarine
- 1 spring onion, finely sliced
- 1 clove garlic, crushed
- 250g pumpkin (of choice), grated
- 2 cups SR Flour
- 1 cup cheddar cheese, grated (optional)
- 2 tablespoons chia seeds
- 1 large egg
- 1 ¼ cups milk of choice (we used rice milk)
Line a 12-cup muffin tin with muffin cases.
Melt butter/margarine in a frypan over medium heat. Add spring onion, garlic and pumpkin and cook until soft. Allow to cool.
In a large mixing bowl combine all ingredients, mixing well.
Spoon mix into muffin cases and bake in oven until brown and cooked through, approximately 15 minutes.
