Kitchen Garden – loving the rain

Our garden has really loved the rain over the past fortnight. We had many requests for this fortnight’s recipe, so here it is:

Rainbow dip

Ingredients:

  • 100 grams tasty cheese
  • 1 can red kidney beans
  • sour cream
  • 2 roma tomatoes
  • 2 shallots
  • 1 avocado
  • 1 tablespoon of homemade taco seasoning
  • tortilla/corn chips to serve

Method:

  • grate the cheese
  • in a small mixing bowl, mash the beans with the taco seasoning
  • dice the tomatoes
  • finely chop the shallots
  • mash the avocado into a bowl

Layer the ingredients in a clear glass bowl or in individual small glasses in the following order:

1st spoon the avocado into the bowl/glasses
2nd add the tomatoes and shallots
3rd spoon over sour cream
4th add the bean layer
5th top it all with grated cheese

Serve with tortilla/corn chips.
